Oh, tis the season! Many a holiday we have celebrated in these past three weeks. It began with my birthday on November 17th. We celebrated with java and voice—karaoke and Starbucks, to be exact. Aaron and I thought we’d ring in the holidays with our rendition of “Feliz Navidad.”

Next was Krystle’s birthday and Thanksgiving on the 22nd. We combined the two, making a feast fit to celebrate both occasions. There was turkey, green bean casserole, sweet potatoes, creamed corn, rolls, stuffing, and mashed potatoes & gravy…all made without an oven. Much thanksgiving and rejoicing was shared…as well as apple pie and carrot cake.

How we cooked our turkey. Two hours of cooking on a hot pot, and this is what we got:

Most recently we shared in patriotic pride for Seth’s birthday on December 1st. We had the ridiculous opportunity to witness the band America—live in Bacolod. It in fact maintains the three original members from 1970. We sang along to songs like “Sandman,” “Horse With No Name,” and “Ventura Highway.” Seth was filled with joy, as he sat with heightened posture watching them from a distance.

Fear not families, friends, and supporters! Birthday’s and holidays overseas are just as eventful, and we are creating some traditions of our own. Maybe next year I will cook my turkey in a skillet over a hot pot again.
