Some people have asked me what the food is like on the race. To future racers, it's not as bad as you might think. The food here in Nepal is amazing, and the food in Africa can be described in two words, bland and boring, but not terrible. Our two best meals (and only really great meals) in Africa were Thanksgiving in Tanzania and Christmas in Mozambique. We ate out at a hotel "restaurant" for Thanksgiving, and our wonderful teammate Mikala delagated and coordinated our Christmas day food. Here were the entrees. Leave me a comment and tell me which day's meal you think was best.

Breakfast at our host home in Tanzania was rolls with peanut butter and jelly and carrot omelettes! Our Mozambique breakfast was breakfast tacos with peppers, onions, cheese, and salsa!

Lunch in Tanzania at our host home: rice (like usual), spinach, beans, and fresh pineapple. Lunch in Mozambique: barbeque cheese pizza.

And finally, for dinnertime a "cheeseburger" with Italian dipping sauce snd "salad" at the restaurant in Tanzania. (They forgot the burger the first time,and I had to get them to add the meat.) Mozambique dinner was a beef roast, mashed potatoes, green bean casserole, baked apples, glazed carrots, and monkey bread.

We had great friends and fun at both events!!!!!!!!!!!!!!

Oh and don't forget the apple pies for dessert! Or the rat in his nest under the stove that accidently got cooked!! 🙂
