So we have been staying here in Ho Chi Minh City pretty much for the whole month, with our exception of traveling north to the central part of the country – Dalat. [I will post pics from that adventure in another blog]. We have been spending a lot of time with University students here in the city. We are keeping busy and we have also worked a lot with orphans who are handicapped, young children with cerebral palsy and the sick and elderly. This month has been a challenge and has been a huge variety for us. We are loving every minute of it. While I am in a place where I cannot talk about the depths of what we are really doing and why we are here, I will save my deeper thoughts and blogs to post when I am out of this country. This month has taught me a lot about the freedom that I have living in America and how I am not able to experience those freedoms here. I will fill you in more about that later on though. We ride motos everywhere in the city, and it is INSANE! There are 8
million people that live in Ho Chi Minh city and thousands of motos on
the road at all times. It is quite scary at times…but pretty much our
only way of transportation other than the city bus. This is one of the
university students that I met.

This is an AMAZING coffee drink that we all fell in love with – I forget what it is called..” Bac suix” or something like that. The bottom is filled with sweetened condensed milk (which they put in EVERYTHING here!) and then a layer of chocolate and then a top layer of coffee. MmMMmm!! SOO GOOD!!
 
These are Vietnamese pancakes. Not like your every day American pancakes. These have vegetables inside. The university students showed us how to properly eat this tasty meal! It was really good! You take the vegetables and put them in the middle of a piece of lettuce or leaf and then wrap it like a burrito and then dip it into fish sauce and then shove it in your mouth! MMm So Good!! =)
 
Here w are at karaoke. We took the university students here last night to sing our hearts out. It was quite amusing I might say.

So most people know that my nickname is “Snack attack” or “snackzilla” simply because I love food and I always have snacks with me everywhere I go. Well one night I had a chocolate craving so I busted out my smooshed kitkat that I got 2 debriefs ago…way back in Santo Domingo a few months ago. It was smashed and stale, but Renee and I devoured that little kit kat and we thoroughly enjoyed it. The things you do for little morsels of food (especially CHOCOLATE) when on the world race….! lol
