This Thanksgiving was a bit different from all of my previous Thanksgivings. Instead of driving four to six hours home in the holiday traffic and snow, I got to ride for two hours along the coast and through the mountains of the most beautiful island ever.
Heather, Caitlin, and I were able to take part in a medical outreach with the ICM team we’re working with this month. We drove to the opposite “corner” of the island we’re staying on, to a town called Ubay, to visit a pastor and do a Bible study and run a small medical “clinic” for the afternoon (more about that later).
When we got to the pastor’s place, we were greeted with a lunch that looked something like this (this is the “after” picture):
Lunch on Thanksgiving included: crab, shrimp, fish, gizzard, vegetables, fried things that I think were called Lumpia (veggies and meat – kind of like an egg roll), rice, bananas, and iced tea. It was amazing!
