This year I am in the Philippines for Thanksgiving. I must say that if you get a chance to experience the Thanksgiving/Christmas holidays here-go for it! My team and I are on Negro’s Island, in the city of Bacolod. We have been very blessed here. We did our Thanksgiving feast shopping at an international supermarket that has everything you could possibly want-besides cranberry sauce and eggnog-but I’m not complaining. Here is the menu that the seven of us put together for our fantastic meal:

candied yams
cream corn

sparkling red and white grape juice and apple cider
apple pie and carrot cake-from an amazing bakery here

With the exception of the pie and cake we made everything with no oven-yes that’s right my friends, no oven! Mom’s around the world should be proud. Seth took the honors of preparing our turkey for us. He had a clay pot with coals burning at the bottom of it with a rack on top. Then he put the turkey in a deep skillet with a lid on top, and left it to cook for about two hours. Can I just tell you that was one of the best turkeys I have ever had. We were so proud of him-Seth Sr. you would have been too! I couldn’t have asked for a better way to spend my first Thanksgiving away from home.

And on top of everything it was also Krystle’s 23 birthday, so we were able to celebrate that as well.

Now we can officially start listening to Christmas music! Oh happy day.
