My goal is to give you a homemade recipe from each country! You may or may not always have the tools to make them, but it’s worth a shot if you can!
We were blessed to work with two women named Oddie and Madame Yao. They graciously went with us to a market to help us buy all the food, then came to our house to make an authentic dish called Fooutou Banane.
Soup Ingredients:
3 red onions (chopped)
4 tomatoes (diced)
¼ clove of garlic (chopped)
4 Carrots (chopped)
Parsley
Small can of tomato paste
1 cup of peanut paste (finer than peanut butter)
3 cups of water
1 beef bouillon cube
1 chicken bouillon cube
1 whole chicken
Oil
Yam/Plantain Ingredients:
4 plantains
3 yams
Soup:
1. Take a soup pot and add a little oil to the pot along with the chopped onions, carrots, garlic, diced tomatoes, and parsley
2. Let the vegetables simmer for about 5 minutes
3. Add more oil to another pan and add the chicken to fry (fry until a medium brown color on both sides)
4. Add about 3 cups of water, tomato paste, peanut paste, beef and chicken bouillon cubes to the soup
5. Allow soup to simmer for about 10 minutes
6. Add the fried chicken to the soup, turn the stove to low, and cover the pot
The soup should be closer to a thicker stew-like consistency
Yam/Plantains:
1. Take a large wooden mortar and pestle to crush the yams and plantains in
2. Continuously pound the yams and plantains and fold them over each time (you may need to add a little water to prevent everything from sticking)
3. Finished yams and plantains should look doughy (in the shape of a small rugby ball)
Time to eat!
Take a piece of yam/plantains, and add some soup to your plate. Pull off a piece of the yam/plantain, scoop up the soup, and eat! No utensils needed!! Bon appetit!!
