One thing I’ve found on my World Race is that I have been cooking a lot. I cooked a few times month one, almost everyday month two, and most of month three as well. I really love to cook so I am not complaining. But cooking on the race is not as easy as cooking at home.
One of the best parts about being the cook is getting to spend time in the kitchen kitchen bounding with my teammates and squadmates. In Mozambique, I woke up and made breakfast on the weekends with Janelle.
One of the best meals we made for breakfast were Paris Muffins. We spent a lot of time talking while we cooked and then we ate breakfast on the screened-in-porch. We shared coffee and talked for hours! We then spent time journaling together. It was a nice and relaxing day.
I loved the time I spent with Janelle, and it was the kitchen and cooking that brought us together.
Here is the Paris Muffin Recipe we made:
2 cups flour
4 teaspoons baking powder
1/2 teaspoon of salt
2 tablespoons of sugar
1 egg beaten
3 tablespoons of butter
Cinnamon sugar
butter melted
1 medium apple chopped
Mix flour, baking powder, salt, and sugar.
Beat milk and eggs together.
Add the butter.
Add egg mix to dry ingredients and mix until blended. Stir in apples.
Fill muffin tins to 2/3.
Bake for 15 – 20 mins at 180 degrees celcius.
Roll baked muffins in melted butter and then in cinnamon sugar. Then serve.
