I love pancakes!  And I will always say that it is my favorite food in the whole world.  I was nervous that pancakes didn't exist anywhere but America.  That is just not true.  Of course if I really wanted them, sometimes I had to make them myself.  And so I did, in almost every country I visited.  Here are a couple basic pancake recipes that work in all the world.

 

INGREDIENTS

  • 1 cup all-purpose flour, (spooned and leveled)
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 tablespoons unsalted butter, melted, or vegetable oil
  • 1 large egg
  • 1 tablespoon vegetable oil
  • Assorted toppings, such as butter, maple syrup, confectioners' sugar, honey, jams, preserves, sweetened whipped cream, or chocolate syrup

I made pancakes in almost every country I was in and you can find all the ingredients needed to make a basic dough.  The one above is quite simple, but I usually simplified mine even more.  I am not much of a "measure-er"  so I just guessed the amounts to put in.  Often times I would use baking soda because it's easier to find than baking powder.  Just make sure you use much less than this recipe for baking powder.  Essentially all I put in my recipe was flour, salt, sugar, eggs, oil, baking soda and milk ( I used water when I had no milk).  

 

I never saw maple syrup this year except for imported syrup from Canada in Ukraine.  So I made my own because I brought a bottle of McCormick's imitation maple flavor with me.  It's quite simple.  Make a basic simple syrup and add McCormick's Imitation Maple Flavor.  Or get more fancy and try this recipe.

Ingredients

  • 1 cup granulated sugar

  • 1 cup packed brown sugar

  • 1/8 teaspoon salt

  • 1 cup water

  • 1/2 teaspoon maple flavoring or extract

Make sure to boil for about 5 minutes so that it thickens well.
