I first heard about this dish in Pozega while Lauren Maldonado was raving about it and seeking to find it every time we went out. I did not know why she was so emphatic about finding these sausage kind of things, could they be that great? In fact, they are.

1 1/2 pounds ground pork

1 pound lean ground beef

1/2 pound ground lamb

1 egg white

4 cloves garlic, minced

1 teaspoon salt

1 teaspoon baking soda

2 teaspoons ground black pepper

1 teaspoon cayenne pepper

1/2 teaspoon paprika
Directions:
Preheat a grill for medium-low heat.
In a large bowl, combine the ground pork, ground beef, ground lamb and egg white. Add the garlic, salt, baking soda, black pepper, cayenne pepper and paprika. Mix well using your hands, and form into finger length sausages about 3/4 inch thick.
If you are feeling very bold go ahead and try this guy out. It was a lot of fun, but I don’t know that I would be brave enough to try it on my own. The thing that I enjoyed the most about these treats was the suprise of not knowing what flavor I was biting into.
Ingredients:
2 ½ cups of milk
2 eggs
1 ¾ cups flour
1 level tablespoon sugar
a pinch of salt
Directions:
Beat the eggs and add the milk, sugar and salt. Add the flour last, adding a bit more milk if the batter is too thick. The batter should be much thinner than typical pancake batter. After the batter is mixed, let it sit for 15 minutes.
Using a ladle, pour the batter onto a hot, buttered, non-stick pan or griddle. Slightly tilt the pan to spread the batter thinly over a larger area. Let it cook for a few minutes before turning it over. The palacinka should brown slightly.
Possible filling ideas:
Wet fruit such as strawberries, pineapple, raspberries, or tangerines.
Nutella
Various jams such as strawberry, apricot, or blueberry or my personal favorite raspberry.
