12  Unsung Heroes!

 

56 hours on a big bus in Zambia alone! (Chapptole to Lusaka to Kitwe to Livingstone to Lusaka to Lilongwe, Malawi)

 

5 times eating out at a restaurant (One mexican place, italian place – 2x, coffee shop – 2x)

 

6 home cooked meals! All were absolutely amazing! Here is a list of the meals: baked spaghetti, chicken curry over white rice, pancakes with eggs, spaghetti with a homemade sauce, oatmeal, and nsima with chicken, beef, white rice, noodles, and greens.

 

3 authentic Zambian meals. The first was cooked by Gordon “Golden” and Leo at our hostel in Lusaka – nsima, chicken, and greens. Another was a lunch in Chongwe which was Shawamra – chicken cooked on a spit and shaved off into a wrap with fries, greens, and a sauce. A pastor made us nsima, chicken, beef, noodles, cabbage, and white rice.

 

4 roasted corn from the side of the road, also bought various fruits and vegetables from street vendors

10+ taxis rides

 

10+ rides on the small local buses….where you have to get 18 people squeezed in before it leaves or pay to cover the cost of the empty seats

 

Most frequent meal in Zambia…….Peanut Butter and Jelly – mixed fruit or mango

 

Most creative team breakfast was omelets with green bell peppers

 

Best team lunch other than PB&J was a scrambled egg, fresh avocado slices, tomato slices, mango jelly on toast which created an awesome sandwich….so good

 

Tasty team dinner would be a meal made in Livingstone with Katherine making us fried rice and Gina creating a master piece stir fry with chicken, onions, and bell peppers.

 

Most random meal was on a long bus ride from Chapptole to Lusaka that was a boiled egg and a banana….yes I was still hungry after that meal.

 

Mango season and being near mango trees was probably the best random discovery.

 

Overall $5 per person per day goes a tad further in Africa but still have to be very price conscious while grocery shopping. Making team size meals help out a ton too!

 

Most challenging shower was a slow cold drip in Kitwe. The best was at the hostel in Lusaka which had the most resemblance of a western shower.
