So, let’s get real. Food is delicious. Especially when it’s new to you and comes from other countries. Even more than that… it’s most delicious when it’s new, foreign food that you can get while staying in that particular foreign country.
 
Each country we’ve been to has its own special food that I’ve gotten obsessed with. Its own special delicacy that I won’t be ashamed to spend money on in order to have one more time.
 
Honduras had its 2 for $1 tacos next door to our home. It also had its chicharron at the other restaurant next to our home.
 
El Salvador had its cheap fruit at the tienda next door, pupusas at pretty much every street vendor we passed, and mocha crepes at the outdoor mall by our home (most delicious food I’ve ever had).
 
This month, Guatemala had pina (pineapple) heljados (spelling?) at the tienda at the bottom of the mountain, spongebob squarepants pancakes that Jah-Jah and I would invest in on most opportunities when in Coban, fresh fruit galore, and this place:
 
 


 

Welcome to Taqueria Jalisco, home of the most fantastic tacos that will ever come across your taste buds. Seriously. Not only that, but the most fantastic wait-staff you’ll ever find.


 
Karilyn and I found this spot on my birthday. Wandering off from the masses of our group while we had some free time in Coban, we came across this taco stand and fell in love. The food was delicious and we immediately became friends with one of the guys who works there, Will. He’s hands down one of the coolest people I have randomly met on this race. Having lived in Portland, Oregon for 19 years, his English was fantastic and his persona was comforting – one that reminded us of home.


 

We came back and visited the taco stand at least twice a week – half to eat tacos and half to visit Will.
 
We told as many of our friends about Taqueria Jalisco as we could and brought them with… and they immediately fell in love as well.
 
Each time we went, we were able to have amazing conversations with Will. We were able to hear a good chunk of his story, were able to talk with him about God, and were able to pray with and for him

 

It’s funny how sometimes on this Race, the people that we meet while randomly out and about end up being my favorite people that impact me the most.
 
It’s safe to say that I’m going to miss this place, Taqueria Jalisco.
