This month we have the opportunity to work at Café Ole, a recently opened restaurant with IOU. Kathryn, a recent culinary school graduate, heads up this endeavor and keeps us workin´ hard. The profits from the restaurant go to fund the local orphanages in Cochabamba while also servicing the airport employees. Every part of the restaurant is holistic, even down to the food scraps that are fed to the pigs being raised at one of the orphanages.
