If you know me (Erin) at all, there’s one thing you know for
sure abut me: I’m a VERY picky eater.
For those of you who don’t know me very well or who don’t understand the extent
of my eating habits, let me give you a run-down of the situation…

– Potatoes and corn are the only vegetables I will eat. And
yes, I realize potatoes are technically a starch and corn has about zero
nutritional value.

– I don’t do condiments. No ketchup, no mustard, no mayo, no
steak sauce, no dressing, etc. My condiment of choice is cheese (see the next
bullet).

– I’ll put cheese on almost anything.

– If I had my choice I would eat some sort of sweets or
desserts at least 3 times a day. I love sweets! Any sort of cake, cookie, ice
cream, pie, etc. minus any nuts (hate them!) or coconut (tastes like
sunscreen).

– I’m not a fan of bread. I’ll eat it if I have to (which
has happened a lot this year) but honestly I’d always prefer to have a sandwich
w/o bread, pizza w/o bread…you get the point.

In summary, the list of things I do eat is a lot shorter than the list of things I don’t eat.

BUT

In an effort to expand my horizons this year, I’m stepping
out of my food box…slowly.

This month our team gets the awesome opportunity (no
sarcasm, I am genuinely thankful for every meal…especially free ones) to have
rice and beans EVERY day for lunch. As you can guess I was ecstatic when I
heard the news (yes, sarcasm here). You’ve heard the expression take lemons and
make lemonade. Well I’m taking beans and making…ok that expression doesn’t
apply here, but the point is that I’m making the most of it!

 Whatever the date on
the calendar is that day, that’s how many beans I eat for lunch. On July 1st I ate my first bean, when we celebrated
Independence Day I had 4, on the 10th I choked
down 10, and so on and so on.

      
 
     

I won’t lie – I’ve skipped a few days. Some days I just hear
PB&J calling my name. But the point is that I’m doing it. And while this
may seem like not a very big deal to some, if you know me you know how big of a
deal it really is.

And just so you know…I’ve been trying new foods all year
long, this is just the most intense and long-term food craziness I’ve done.
Believe it or not friends, I’ve also eaten these foods in the past 7 months:

 

– squid (pictured left)

– a whole fish!

– crocodile

– an ox heart

– ostrich

– crunchy peanut butter

– carrots

– spinach
