I looove Ireland!
In local lingo – Ireland is grand, brilliant, lovely, and gorgeous.
I love the oh so refreshing sea swims and the dramatic
coastlines and cliffs… and did I mention that charming accent?
What’s the crack here in Ireland?
From the beginning of the world race trip, my teammates have
generously complemented me on my hair… This month I found out my jubilee comrades
are not the only creatures that like my luscious locks… in fact, they’ve provided
a home to numerous creatures.
Consequently, an exuberant amount of time has been spent hunting… right
in the jungles of my own hair!
Praise God that I get to have joy through this pesky
experience. Praise God that I have
such wonderful sisters who help with the extermination process. An honourable
mention is due to my dear team mate Tracy Hagar – lice hunter of the year. She is the first one other than God to
proclaim to know every hair on my head… apparently I have one white one. No amount of Ben & Jerry’s Fish
Food ice cream will sufficiently express my gratitude.
I’ve enjoyed cooking this month. It’s a privilege to take care of my teammates in this way. Sometimes it seems like I am
cooking quite frequently, but I’m savouring the opportunity to have access to a
kitchen to liberally cook fresh meals.
I’ll let you in on a bit if a secret I haven’t revealed to
the recipients of the food….This cooking thing, It’s actually a big game for
me…
See on the world race we have a limited budget (Our food
budget is $ US 3.25 per day, per person) and as the team accountant, I am ever
aware of it!
Which leaves little room for play in terms of groceries
However, we have generously been given access to some pantry
cupboards and copious amounts of bread, canned grapefruit, and baked beans… which
pretty much makes for a perfectly balanced meal -carbs, protein and even
produce – fruit.
So back to the game – using random ingredients, pennies, and
the self made rules, delightful meals must be efficiently crafted to feed 15
hungry tummies. Rules:
1. 1. Let the creative juices flow. This means making up the recipes on the go… actually as I call out “recipe instructions” to helpful teammates.
2. 2. Conjure up a title for these dishes so
that I have an appetizing answer to the question… what’s for dinner?
3. 3. Make
the most of every ingredient – for example 2 small cans of tuna makes salad for
15.
4. 4. Renew
left overs for new purposes.
5. 5. Add
love and prayers all the time, and extra special prayers to the years past
expired ingredients (shhhh).
Enough about the kitchen games… The past 2 days I’ve set out to combat the Suzie home-maker
role; I’ve ventured out of the home and into the building zone in the back 40
of the property. (We’re doing
renos to accommodate future world race teams and others.) I tisabonded, tanked, and blotted (plastering terms) the walls of a bathroom.
Yesterday I was promoted to
chief tisabonder; today I
literally climbed my way up the handy-woman ladder to power tool status.
Who knows what tomorrow will bring!
