Vegetarian/Veganism has really been something that has been circulating throughout my thoughts for about a year now and while I’ve been wanting to make the shift so dearly, but due to the lack of resources it still hasn’t been able to be that attainable to me, and it definitely is not all that attainable when you’re half way around the world and living off of $5 a day!
However, I still would like to share with all my vegan/vegetarian friends, and all those who are inspired to take the leap to a plant-based diet all the tasty things around the world that I have found that have you can make yourself with no Animal products in it!
So first country up! The beautiful country of Cote D’Ivoire! Just a quick disclaimer whenever my team and I made this dish with our church hosts their was chicken added, and yes I did partake in indulging in it. And yes I felt a sense of grief for participating in the killing of a life…However, with that being said I felt a little better knowing the chickens here in Cote D’Ivoire live a pretty happy long life just roaming freely throughout the city! But all in all this meal would totatally be just as easy to make without adding any animal products.
