In 11 months, I have eaten a plethora of different foods, but majority of the time rice was included. Some of these are foods that are regularly eaten in these countries and some I chose to go out on a limb and try.
India: goat curry, rice and curry for every meal to the point that I had built up a tolerance for the spicyness
Nepal: spring roll (fried bread with chow mein inside), samosa, water buffalo momo
Thailand: cricket, bamboo worm, fried papaya, purple banana bread
Cambodia: veggies and rice and fruit smoothies, bread stuffed with weird meat
Vietnam: Bahn my (bawn me) with strange meat, octopus, pho with gross chicken
Ethiopia: injera
Rwanda: kawunga (made from maize and boiled water), so many potatoes, yucca
Bolivia: wheat soup, rice soup, yucca, plantains in so many different forms, deer, probs horse
Peru: liver, chicken fried rice with hot dog in it, Aji de gallina
Ecuador: tuna and potato casserole, ceviche (cold fish soup)
Colombia: cheese arepa, corn arepa, hot dogs with everything, corn and rice in my eggs, feijoa (sour/sweet fruit from a tree)
Thank you for your support, prayers and encouragement! I will be back on American soil in 6 days!
