In Ukraine at church we went to a Vereniki party.  It was quite similar to our American chili cook off. All the ladies had different ways of how they prepare the vereniki.  So get creative and enjoy variety.

Ingredients:

Mashed potatoes

A basic flour, water and salt dough.  Substitute kefer for the water is an option too.

Sour cream

Make sure your dough is similar to a pie crust texture good enough for rolling out.  Flour your surface and roll the dough out till it's very thing.  

Cut out circles.  Just use the end of an empty, clean jar to cut out your shapes.  

Put a spoon of mashed potatoes on each circle.  Fold each circle over on top of the vereniki and seal the ends together.  Keep each vereniki separate because they will stick together.  Keep them on a floured surface.  

Place the vereniki in a pot of boiling water.  They will float to the top when they are done – about 3 minutes.  Pan fry them after if you like them crispy.

Eat them with sour cream.

Get creative!  There are many things you can fill them will.  There are many shapes you can cut them into as well.
