So we’ve
been living on a food budget of less than $2 a day. I know this sounds crazy, but
with creative planning and a bit of preparation, it’s more than possible. And
with my teammate Carin’s cooking its enjoyable! So I wanted you to be able to
share in a bit of the deliciousness with me, so please try these at home!

Disclaimer: Ya so we don’t have measuring utensils so these
are just guesses, feel free to adjust to taste! J
Oh and also, please keep in mind I’m in Africa and haven’t had normal food
since June.

Breakfast:

Mix one cup of uncooked oats, a scoop of peanut butter, a
tbsp of honey, and a banana. Stir it all up (either cut or mash the banana in)
and enjoy! I like mine with a cup of coffee. Great way to start the day J

Lunch:

We usually have some sort of sandwich, but an unusual but
tasty side dish can be made by mixing 2 simple ingredients: Pineapple and
carrots! Cut the pineapple in tiny pieces (I recommend keeping the juice with
it) and shred the carrot with a cheese grater- then mix together! It not only
has nice color, it’s really good! (Listen I know it sounds strange but trust me
it’s yummy)

Dinner:

Last night we accidentally created one of the most delicious
meals I’ve ever eaten. (and by “we” I mean Carin) We didn’t have gas for the
stove, so we had to use a charcoal burner from one of the locals. It started
with cooked black beans. Then we added diced tomatoes, carrots, and several
(like 4 or 5) cloves of garlic. Then we added a good amount of chili powder, a
bit of vegetable oil, and little powdered tomato soup mix. It simmered/boiled (you can’t
really control charcoal) for about 10 minutes, then was ready to eat! I think it
would be really easy to make this meal; you don’t really have to use a fire, a
stove would work J
Not only is it super healthy, it was AMAZING. Actually I’m eating it for lunch
again today!

                So I thought
that while I am very far away from you, it would be sort of like we were
bonding if you could eat some of the same weird/tasty stuff I’m eating.
Sentimental, I know. It’s just because I love you (Mom and Hailey, you know I’m
gonna ask so you better try it!)
