[Part 1 – from the series: Little Moments]

“I miss this” said Nick Loper as he scrambled eggs with spinach on the pan.  I looked at this man with brownish blond hair that curls in the back, and pondered that this novel sight to me was something experienced many times before by him.  I inferred that in some past season of life that eggs and spinach was a daily occurrence.  And, I must mention, if it was simply eggs he was making, perhaps I would not have been as interested in the breakfast.  The spinach though, the green making a slight appealing appearance with the yellow.  Suddenly, scrambled eggs seemed not a regular breakfast – but a master-piece prepared by a master chef.  Not just a fine visual appearance of ingredients, but a healthy blend of natural ingredients that give long life.  Food that is clean and makes you feel good, but also taste good.  As I continued to look down at the meal, deep inside, I knew, this needed to be part of my life.  Although, before I was willing to fully commit, I felt the need to ask the obvious, “Nick, is spinach healthy for you?” 

“Oh, spinach is so good for you.”

That response filled me with exactly what I needed to hear.  It seemed good to me to eat healthy food.  As Nick continued to cook his eggs, I thought to myself, being the frugal man that I am – he had bought those eggs himself.  It so happens that breakfast is provided every morning without expense to me.  Nick, however, who had just worked out, needed his protein.  This extra effort, extra shopping time, I saw it was well worth it.  I realized, living and eating healthy, looks like putting in your own effort.  Looks like cooking your own eggs with spinach early in the morning.  

And so I prepared myself mentally to spend $3.00 for 30 eggs.  Even a frugal man has to agree that’s a bargain.  And so the comment of “I miss this” went from a sudden interest in the early morning cooking to – probably 10 seconds later – a desire to do the exact same thing. 

At last, Nick sat down with his well earned breakfast and took a bite.  I eagerly asked “how is it?”

To which he responded “I hate spinach.”

And thus that concludes the story of how scrambled eggs with spinach has become almost a daily morning occurrence for me.  Eating healthier and cooking is something I have recently been excited about.
