The outer layers of an onion are dried and tough from exposure to the harsh elements. They are full of bruises and blemishes from being bumped and tossed around, attacked by insects and other hungry vermin.

When those outer layers are peeled away, it causes stinging and tears as the tender insides are exposed. But through that process, the bruises and blemishes are also removed to reveal a soft and beautiful core.

If the onion is set aside for long enough, the exterior would again begin to toughen. But when a peeled onion is used to it’s fullest potential, it feeds and nourishes us, and brings flavor to our lives.
