Belize was a month of adventures for my team (relentless) as we were the first World Race team to ever go!
Things I ate
1. Johnny or journey cake (flat biscuit thing)
2. Papusas (fried corn tortilla with meat stuffed in the middle)
3. Chips & salsa
4. Apple pie spice cupcakes
5. Burritos
6. Animal style fries
7. Crazy ‘worm’ noodles Mary and Richelle found at the store for spaghetti
8. Fresh tortillas
9. Street tacos
10. Papa Johns pizza
11. Refried beans and rice
Things I did
1. Rode a water taxi
2. Purchased bus tickets to a different country (from Guatemala to Belize) in only Spanish
3. Baked in a cafe for a few days to help out
4. Wrote verses & declarations on take away containers and cups whiling praying for future customers
5. Students from Machaca Outreach prayed for me; giving me words with visions to encourage me in my pursuit of Christ and finishing the Race
6. Got to use a real towel! (It’s all about the little things, guys)
7. Swam in the ‘blue hole’ at the national park in Belmopan
8. Chatted in a hammock for 2 hours with a sweet, sweet friend
9. Explored a cave with friends with my prescription sunglasses :/
10. Visited Spanish Lookout, a Mennonite community (delicious ice cream)
11. Drank (clean) water from a plastic bag
Things I learned
1. I apparently inherited my grandmother’s anxiety about open water or I have control issues or both
2. Sometimes you need to be reminded how important communication is
3. Ministry is whatever you make it, like praying for customers who will eat the brownies you made and that no eggshells were in the batter
4. Blessings come in all shapes and sizes and are usually the simple things
5. A little Spanish, some charades, and some laughter can go a long way in communicating with others
6. Sometimes you need to bring it ALL to the TABLE and lay it down for others to see and pick up to help you
7. Some of the best talks happen in hammocks
8. When you eat ice cream in the back of a pickup truck in 90+ weather, it will melt at an outrageous rate and ‘rain’ on your friends sitting further back
9. Sometimes you have the be the one to speak up to bring about change
10. You find ‘familiar’ people everywhere, you may have have just met them but it feels like you’ve known them forever
11. Remembering how to ride a bike can be hard especially with crazy golf cart traffic and ship rope speed bumps, but you always get a good story
