Cooking Beans in the Dark…….
Yup that’s right cooking beans in the dark has been one of my many memorable nights in Honduras thus far. When we got back from church to our home for the month, it was dark (the lights went out in the whole area). Most everyone was getting ready for bed, it was about 9:45pmish, but the few of us that went to church missed dinner so our first stop was the kitchen. We had dinner saved for us. I have an awesome squad by the wayJ Nidia(Tony’s wife) was in the kitchen cooking beans for our bomb breakfast the next morning. So I decided to stay with Nidia and let her borrow my headlamp since it was pitch dark in the kitchen and she was staying up late to finish our breakfast. I really enjoyed talking with Nydia while cooking because it felt like back home with my mom cooking. I thought of times in Mexicali with my family. Nidia and I talked about each of our families and her growing up. She told me about her dad and her mom, who is visiting this week, it all just felt so comfortable and such a warm feeling of home. The smell of beans cooking, which we stayed till almost 11pm for them to be done, the look of the kitchen, (Sotelo family think of my abuelita’s kitchen), speaking in Spanish, it was warm fuzzies all overJ I loved it! It’s the simple things to take joy in. Being so far away I felt so close to home at the same time.
