Cross-Cultural Cooking: Indonesian Semur Ayam Recipe
While in Jakarta, Indonesia, I learned how to make SEMUR AYAM from the wonderful Imit. Imit is a very sweet woman I met while staying at our friend Karl’s house. Even through the language barrier, there was much joy and love shared during this learning experience.

Here is the recipe.
Imit’s Semur Ayam
Ingredients and Supplies:
Oil {Minyak} – Enough to fry the potatoes as the potatoes are submerged.
Butter {Mentega} – About a half a stick… Maybe
Onion {Bawang Bombay} – 1
Garlic {Bawang Putih} – 2-3 Cloves
Ginger {Jahe} – 1 Tablespoon
Cinnamon {Kayu Manis} – 1 Stick
Clove {Cengkeh} – 4-5 Cloves
Nutmeg {Pala} – One Ball
Tomatoes {Tomat} – 4-7 Medium Sized
Water {Air} – 4-6 Cups
Pepper {Lada}
Salt {Garam}
Kecap Manis (Indonesian Ketchup – Similar to Worcestershire Sauce) – Around 1 Tablespoon
Masako Seasoning (Maggi) – 1 Package
Chicken {Ayam} – 1 Bird
Potatoes {Kentang} – 4
Rice Noodles – 1 Package
Crispy Onions {Bawang} – As Many As Desired
Process…
- Potatoes ~
Peel, wash, and cube the potatoes.
Fry the potato chunks in oil until golden brown.
Remove potatoes from oil and set aside.
- Chicken ~
Clean chicken.
Fry the chicken in oil until browned.
Remove from oil and set aside.
- Sauce Prep ~
Peel the garlic. Use the side of a knife to flatten the garlic cloves. Then chop the garlic.
Peel and chop the onion.
Peel and chop the ginger.
Slice the tomatoes.
Use the side of a knife to flatten/press the nutmeg and add this to the cloves and cinnamon.
- Rice Noodles ~
Soak rice noodles for a bit. Once they have been soaked drain and cut into smaller pieces. Set aside to add later.
- Semur Ayam (The Final Dish)
Melt butter in a pan.
Add the onions and sauté
Add garlic, ginger, cinnamon, clove, nutmeg, salt, pepper, and tomatoes – Sauté for a bit.
Add water and stir.
Add Kecap Manis and Masako
Add chicken and fried potatoes. – Stir – Simmer
After simmering for 10-ish minutes, add rice noodles. – Stir
Cook for 10-15 minutes and then remove from heat.
Garnish with crispy onions.
* You can eat Semur Ayam as a sauce over rice or by itself.
