I’ve had a lot of serious blogs in the past, and I’m trying to be a little more lighthearted.

This month I’ve been cooking with my teammates Sara Katherine and Meredith, and we’ve learned a lot about cooking in Nicaragua.

Day One: Rice. We started by boiling water, but we soon had one of the women asking “What are you doing??” Apparently the way to cook rice is to

  1. Fry an onion in a bunch of vegetable oil
  2. Add desired amount of rice
  3. Stir and fry until all the rice turns solid white (not clear-ish white)
  4. Add water (double the amount of rice)
  5. Don’t cover, just let it simmer until it’s done.

 

Day 3: Huevos Rancheros.

  1. Deep fry a bunch of corn tortillas until they’re crunchy
  2. Deep fry a bunch of eggs and put it on top of the tortillas
  3. Fry up a mixture of onions, green chilies, and tomatoes and stick that on top of the eggs
  4. El fin! Enjoy with a nice flaming hot sauce!

 

Other tips:

When in doubt, add more oil.

Don’t know what to cook? Just start chopping up an onion!

If you see bugs in your pot of beans, just scoop them out and drown them in the sink. The beans are fine.
Measuring cups are overrated.
Hot dogs go in everything.

Make sure you always have salt, onions, limes, cilantro, and tomatoes. That’s really all you need.

Fried chicken is SO easy. Don’t go to KFC- just make it yourself!

Fried tortillas make everyone happy.
