For those of you who wonder what in the world does a world racer eat on their off days on a food budget of $3.00 a day…

The answer: not much! Haha

It is possible to stay in the budget if you are able to find non-sickness inducing street food. However, in some areas food is more expensive so we often have to use personal money on our off days. I will say ive gotten a lot more creative when it comes to meeting my tummys demands. Sometimes I feel like a scavenger taking an extra banana or apple or bread at one meal to save for later.

All that to say, I’m so thankful for the food budget we have been given & have been learning the hard reality of what it looks like to live on less. I realizing it takes a lot of self-control, which surprise surprise, I’m not too hot at. Haha Our budget is often equal or more than the average amount it takes to feed one local. Talk about humbling! I’m learning that food is a gift & as much as I love it, it cannot be ultimate. I often have to rest in the fact that it is a basic need that God promises to meet. 🙂 Thanking the Lord for my food used to be a prayer I prayed just cause thats what i had always been taught, but over the race it has become more genuine. 

Below is a picture of what 4 of my teammates & I ate for dinner the other night with our full days budget of $3.00 per person. I had a Greek yogurt shake, nature valley granola bar, & split a bag of extra BBQ family size chips with a teammate. 

 Here is another picture of what Keeley & I got for 75 boht each ($2.00) for dinner tonight! Mashed tators & 7 pieces of chicken. It wasn’t nutritious but it was delicious!!
